You might find flecks of black in your chicken. Don't worry. They are supposed to be there. Those black flecks are actually fermented black beans that we use in the marinade to add depth of flavor. The little black beauties pre-date soy sauce and have been part of Chinese cuisine for over 2000 years. Fermented black beans, or Douchi, simply adds a salty umami flavor to cooked dishes.
